Cooked Green Salad


Salad is not just lettuce, nor does it have to be raw. try using finely shredded parsley, tender passion fruit leaves, radish leaves or piquantly sour sorrel leaves. If you are aware of which wild leaves are good to eat, these will provide many more choices.

Serves 4

* 2 cups firmly packed edible green leaves
* 1 small onion, finely chopped
* 1 or 2 sliced chillies, optional
* 1/2 teaspoon turmeric
* 1/4 cup finely grated fresh coconut
( or desiccated coconut )
* lime or lemon juice to taste
*salt to taste

wash and finely shred leaves and combine with all ingredients
except coconut in a saucepan with wee fitting lid.
Add 2 tablespoon water, cover tightly and steam over low heat
for 5 to 8 minutes. Uncover, stir in coconut and toss over low heat until coconut has absorbed
liquid. Serve with rice.
