* 1 bunch mint
* 1 cup roughly chopped spring onions
* 2 or 3 fresh green chillies
* 1 teaspoon salt
* 2 teaspoon sugar
* 1 teaspoon garam masala
* 4 tablespoon lemon juice
Wash mint, shake dry and pick off enough leaves to make
a tightly packed cupful. Put everything into blender with onions
at the bottom, add 2 tablespoon water, cover and blend at high speed
until smooth, or pound in mortar and pestle, a little at a time. Add lemon juice after pounding to
a smooth paste. Cover and chill until serving. Best made shortly before
Serving as it will lose its brilliant green colour after some hours.
