Serves 4
* 2 mild salad onions
* salt
* 1 tbsp dried tamarind pulp
* 1-2 tbsp palm sugar or brown sugar
* 2 firm red tomatoes, seeded and diced
* 2 fresh green chillies, seeded and sliced
* chopped fresh mint or coriander leaves
Peel onion, lengthways, then slice very thinly crossways.
Put into a bowl, sprinkle with salt, mix lightly and leave for
at least 30 minutes. Rinse in cold water. Drain. Pour 1/3 cup
very hot water over tamarind pulp and when cool enough
to handle, squeeze to dissolve pulp to strain through a fine nylon sieve and
discard seeds and fibers. Stir in sugar. Combine
all ingredients and mix thoroughly. Chill and serve sprinkle
with fresh herbs as an accompaniment to rice and curry meals.
