Serves 6 to 8
* 4 large onions
* 1/2 cup oil
* 8 large red dried chillies
* 1/4 lemon juice
* 1 teaspoon salt or to taste
* 2 tablespoon sugar
Pell onions and cut into thicks slices. Heat oil and slowly fry
onion until soft and turning golden brown. Snip chillies into
pieces with scissors, shake out seeds and discard stems. Add
to onions, cover and cook gently for a further 20 minutes
or until deep brown but not burnt. Stir in lemon juice, Salt
and sugar. Serve with rice and curries.
