Spicy Mash Potatoes


Serves 4 to 6

* 500 g ( 1 lb ) potatoes
* 2 tbsp melted butter
* 1/2 cup boiling milk
* 1/4 lemon juice
* 1/2 teaspoon salt or to taste
* 1/2 cup finely chopped fresh mint leaves
* 1/4 cup finely chopped spring onion

Boil potatoes until tender, drain in a colander, peel and smash
while still hot. Add melted butter and boiling milk and mix
to  creamy, fluffy and consistency. Add remaining ingredients and
mix well. Pile in a bowl or pat into a plat cake and garnish
with mint sprig.
