Potatoes And Spinach


Serves 4 

* 500 g ( 1 lb ) new potatoes
* 1 bunch English spinach
* 2 tbsp oil
* 1 teaspoon black mustard seeds
* 1 teaspoon cummin seeds
* 1/2 teaspoon ground turmeric
* 1 teaspoon ground coriander
* 1 teaspoon ground cummin
* 2 fresh chillies, slit and seeded
* 1/2 teaspoon salt or to taste
* 1/2 teaspoon ground nutmeg

Scrub potatoes and cut into dice. Wash spinach thoroughly
in cold water, discard tough stems. Steam over low heat in
a large saucepan until wilted.
Heat oil in a wok and fry mustard and cummin seeds
until mustard seeds pop, covering wok to prevent them
spattering. add ground spices, chillies and potatoes. Stir-fry
for a few minutes, then add salt and 1/2 cup water, cover and 
cook for 10 minutes. stir in spinach and liquid that has collected
in the saucepan, cover and cook until potatoes are tender.
Sprinkle nutmeg over and stir. Serve with rice or chapatis.
