Green Bean Sambal


Serve 6

* 250 g (8 oz) green beans
* 1 tablespoon peanut oi
* 1 teaspoon crushed garlic
* 1 teaspoon sambal ulek or crushed
fresh chilli
* salt to taste
* 1 finely sliced onion

Top and trail beans, string and cut in thin slices
diagonally. heat oil and toss beans on high heat
just until colour intensifies and they are coated
with oil. add garlic and fry for a minute or so
longer, then add sambal and salt. beans should
be crisp and half raw. serve as a side dish, with
onion slices added just before serving.
