Spicy Fried Beans


serves 4 to 6

Ingredients:

* 500 (1lb) tender stringless beans
* 2 tablespoons oil
* 1 teaspoon panch phora (see. 1)
* 1 onion, finely chopped
* 1 teaspoon finely chopped fresh ginger
* 1 or 2 chillies, seeded and sliced
* 1 cup tomato purèe
* salt to taste
* 1/2 teaspoon garam masala (see p. 2)

Wash and drain beans, top and tail and cut
into bite-size pieces. heat oil in a wok
or saucepan and fry panch phora until
mustard seeds pop. add onion, ginger 
and chillies, and cook over medium heat
until soft. add beans, stir and fry until
they are coated with oil. add tomato
purèe, salt and garam masala, cover and
simmer until beans are tender.
