Beans with Ginger


A chinese-style dish which makes a feature
of beans and is delicious to eat on its own


Serves 3 to 4


* 500 g (1 lb) green beans
* 2 tablespoon peanut oil 8 or 10 thin slices
fresh ginger
* 1/2 cup hot stock or water
* 1/2 teaspoon sugar
* 1/2 teaspoon salt
* 1/2 teaspoon oriental sesame oil

Wash beans and dry well. top, tail, and if
necessary string before cutting iinto bite-size lengths. Heat a eowok, add oil and when  hot add beans and ginger and
stir-fry for 3 to 4 minutes or until beans turn brighter green and are coated with oil. Pour in hot stock or water, add sugar and salt, cover and allow beans to steam for 4 to 5 minutes or until tender but still crisp. Sprinkle sesame oil over and toss well, serve at once.
