Cucumber in coconut Milk


A cooling accompaniment to curries, but with a bit of bite, depending on the heat of chillies

Serves 6

* 3 seedless cucumber
* 1 teaspoon salt
* 1/2 canned coconut milk
* 1 purple onion, finely sliced
* 1 tablespoon lime or lemon juice
* 1 fresh chilli, seeded and sliced

Cut cucumbers in a thin slices, sprinkle with salt and leave 15 to 20 minutes to draw out excess liquid. Rinse and drain.
Combine with rest of ingredients and serve at room temperature since chilling makes coconut milk coagulate.
