Bitter Gourd Sambol


An acquired taste, perhaps, but there's something compelling about this bitter tasting gourd and it's said to be healthy eating.

Serves 4

* 250 g (8 oz) bitter gourds (also called bitter melon)
* 1 teaspoon turmeric
* 1 teaspoon Salt
* 1/2 peanut oil
* 2 small onions, thinly sliced
* 1  or 2 hot Chillies, seeded and sliced
* 2 tablespoon lime or lemon juice

Wash and Dry bitter gourds and cut into thin slices, about 1 cm (1/2 inch). Lay theme in a single layer on a tray, sprinkle with turmeric and salt and rub into slices over and repeat on other side.
Heat oil and deep fry slices until deep golden brown.
This change flavour from raw and very bitter to still slightly bitter but pleasantly so. Drain fried bitter gourd on paper towels. When cool and crisp scatter with onion, chillies and lime juice. Serve while bitter gourd is still crisp.
